What is Sodium Nitrate?

Sodium nitrate is a colorless, odorless, crystalline compound, sometimes referred to as soda niter, soda nitrate or Chilean saltpeter. Sodium nitrate is used to make fertilizers, explosives, high-strength glass, some limited medicines and to preserve meat. It can also be used as a raw material for the production of nitric acid, which is also important for fertilizers and explosives, for the etching of metals, and for the purification and extraction of gold. What is Sodium Nitrate Used For?

  • Meat Preservation
    Sodium nitrate is a preservative found in processed meats such as hot dogs, sausages, salami, ham and other deli meats. It inhibits the growth of bacteria that spoil meat and preserves the red or pink color of the meat. Sodium nitrate is not added to chicken or tuna because there is no red color to preserve. There is some evidence that it also prevents botulism, but nitrites are more likely to be involved. Sodium nitrate, not nitrites, is used to cure country ham because of the long aging time required.
  • Fertilizers
    Sodium nitrate contains nitrogen, which is important for plant growth. Too much nitrogen can delay fruit and flower production and too little can lead to stunted plant growth. Nitrogen from sodium nitrate fertilizers can be used immediately by plant roots.

    The glass piece is first immersed in a sodium nitrate bath, which enriches the surface of the glass with sodium ions that increase the strength of the finished product.
